This is the start of my homemade biscuits. I created this one because my usual go-to recipe didn't produce biscuits that rise high enough for me. I also don't need a ton of biscuits with there only being 3 of us that are eating them. I'm looking at 2 leftover biscuits in the pan and I'm sure Bob will scarf those down a little later with some butter and honey.
Anyhow, I sift the flour, baking powder, spices and sugar all together.
And I cut in half a cup of COLD butter. You want the butter super cold. It gets cut into the sifted flour mixture.
Cut it into smaller chunks so it's easier to cut in.
We interrupt the regularly scheduled program because Puppa is bored!
And here is our lil Satellite Dish. She's the cutest Satellite Dish I've ever seen. She was cold, so she got all wrapped up like a little Sasha burrito. She's fine now.
Anyhow, back to the program...

This is the whole gravy making part...flour, butter, salt, pepper and milk...I used 2 tablespoons each of flour and butter. I cooked the flour and butter together to make a roux. Then I added in some pepper and a pinch of salt. Then I slowly poured in milk and whisked until it got to the consistency that I wanted it.
See how these suckers rise?? These are not woosey biscuits!
My sausage gravy completely from scratch, including the sausage!
Biscuits and Gravy...a meal fit for a king...ok, well, it's fit for Bob, anyhow.
Baked Lava Baking Powder-Buttermilk Biscuits
Makes 6-7
2 cups all-purpose flour
4 teaspoons baking powder
1/2 teaspoon sea salt
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon cayenne pepper
1/2 cup cold butter, cut in cubes
1 tablespoon sugar
1 egg
3/4 cup buttermilk
Preheat oven to 350 degrees.
Sift the flour, baking powder, sugar and spices including salt together into a medium sized bowl. Cut in the cold butter until mixture resembles coarse crumbs.
Blend egg with buttermilk. Make a well in the middle of the flour mixture and pour in the milk mixture. Combine with a fork until mixture just comes together. You may need to just use your hands. I did...it was a lot easier.
Turn dough out onto a floured board and knead a couple of times.
Pat dough out until it is about 3/4-inch thick. Cut out biscuits and put onto a parchment lined baking sheet.
Bake at 350 degrees for about 15-20 minutes or until biscuits are lightly golden on the bottom.

DeleteOne of my favorite comfort foods. WE used to eat this all the time when I was a kid. Thanks for following me and I am now following you. We lived in our RV for 4 years a few years back - a 34 footer - no sideouts. It was fun.
ReplyDeleteThe funny thing is that I never had B & G until I moved out on my own. We ate so basic when I was a kid, I look back now and just think...GROSS! Hamburger patties, a potato of some type, usually boiled and a canned vegetable. That's it. No imagination. It's my dad's fault.
