Mac & Cheese, If You Please, in an RV

 I posted a blog a little while ago that says what we have decided to do here in the ol' RV for the next six weeks. This is our first dinner. Pretty easy and mainly leftovers and, of course, what I have on hand to use up.
 I don't think people expound the virtues of macaroni and cheese enough anymore. Mac & cheese is an awesome meal...comforting, homey and utterly delicious if you make it yourself and throw away the boxed stuff. It's even fancier when you bake it in Le Creuset!! I know! I know! This is a Le Creuset fish gratin pan...but, you know...I paid $2 for it a yard sale, so what the hell do I care...it bakes mac & cheese just fine!!
 This is bowtie pasta, snow pea pods, ham, Jarlsberg, sharp cheddar...
 mixed with a can of cheese soup and a can of whole milk. I sprinkled some chopped red onions on top and more of the cheese.
 YUM!!
 Wanna taste it?? You know you do!
My Mac & Cheese, If You Please

***no recipe, really...I shall just list down what I put in there and you can go from there***

Bowtie pasta
A can of cheese soup
Cubed up leftover ham
A small package of fresh snow peas
A can of whole milk
A big ol' squirt of dijon mustard
Half an 8-ounce block of sharp Cheddar cheese
I'm guessing about 3 ounces of grated Jarlsberg cheese
Some chopped red onion

Boil the pasta and peas...drain. In the same pan, heat up the soup and milk, mustard and 2/3 of the cheese. Put the peas and pasta back in the pan with the sauce and toss to coat. Pour in a baking dish sprayed with non-stick spray. Sprinkle the onions over the top and sprinkle the rest of the cheese over the top.
Bake at 350 degrees for about 25 minutes or until it's bubbly and browned on top.
Dig in!!

  1. Nothing like real comfort food...you can't go wrong with mac 'n cheese and never the same way twice!

  2. It's funny and you're right...mac & cheese is NEVER made, at least in this RV, the same way twice. LOL! I used to make a white sauce and all that...and I still do every now and then if I am out of cream soups. But, I've used CoMushroom soup, cheese soup, CoAsparagus, CoBroccoli, CoChicken...CoYouNameIt!! It pulls double duty for me. I get to slack off in the galley, which is completely cool every now and then, and, I get to get a can gone out of my overpacked cabinets, which really rocks because I am scared every single time I open them up...I think I'm going to have something fall out and smack me on the head. It's happened before and it will happen again. I'm sure of it.

  3. Ha, that settles it, We must be sisters! In my recipes I rarely put down actual measurements unless it is baking. I'm enjoying your blog.

    1. ;) I hate measuring. I have a group of friends on Facebook and all the time I get links to different recipe contests...only problem is that I don't measure anything. Sure I can write a recipe, but I have to guess at measuring..LOL! And...I'm lazy! I hate writing junk down!!
