Austerity meal...
I wish I could take credit for this recipe, but I can't. It's not my idea. It is, however, delicious!! These are Root Beer Pork Chops. Click on the name to see the original recipe...I'll tell you here what I did differently.
First, you soak the chops overnight in a can of root beer. If you're going to grill up a good amount of them, use a couple.
It's weird, we buy soda in the summer when the store has the "Buy 2, Get 3 Free" deal going on. We usually hit that sale up twice and that's our soda for the entire year. We just don't drink that much of it. I do cook with it, however. This recipe, Dr. Pepper chicken...which is basically the same as this recipe but with Dr. Pepper and cut up chicken..., apple dumplings using cream soda...you catch my drift.
The root beer reduction sauce is where I go astray of the original recipe. Mine is simply: a can of root beer, some balsamic vinegar, worcestershire sauce, garlic powder, black pepper and a dash of hot sauce. I let it reduce to half.
I think these are the chops that we had cut from the whole loin that we were going to stuff because they were about 2-inches thick...that's how we buy pork...we buy the whole thing when they go on sale...so we pay roughly $15-$16 per loin. We usually buy 2 of them and have one cut up into roasts and the other cut into chops. Anyhow, these get grilled over medium heat and get get brushed continuously with the root beer reduction sauce.

Hi Kate!! I'm glad you dropped by...thanks so much for the comment. These chops are a regular in our household...tons of flavor! I also do the same thing with Dr. Pepper and chicken and I have used Dr. Pepper on the chops, too...tasty! I hope to see you around more often! Peace!!
