Austerity Meal #...???? Crap! I lost count!! Anyhow, my food adventure began today with finding these for 99 cents per pound at a local supermarket. Good deal, right? I think next time I'll hold out for the ripe Washington strawberries or when mine come on this year. These? Not so much. I hulled them and put them in the freezer for jam because they aren't very sweet!
I went in search of a recipe that I could use these in today, because I wanted to cook them. I found that just sang out to me to make it. It is called Fresh Strawberry-Cream Cheese Coffee Cake. No, it's not my recipe. I wish it were!!
I changed a few things. I baked this in a 9 x 9 pan for about 50 minutes. I changed the milk to heavy cream and I added in an extra teaspoon of vanilla. I also had almonds on hand, so that's what I used for the top.
Southwestern Avocado Burgers
*makes 3
1 pound ground sirloin
4 strips of crispy bacon, drained and crumbled
1/2 cup shredded cheddar cheese
2 green onions, minced
1 jalapeno, seeded, veins removed and minced
2 cloves garlic, minced
Salt & pepper, to taste
Combine everything and shape into 3 patties. Grill until they are as rare or as done as you like them. I had Bob put some barbeque sauce on them, too.
**I put these on cheese buns with sliced onion, green leaf lettuce and sliced avocado. I just used a bit of mayonnaise and regular yellow mustard.
The Strawberry-Cream Cheese Coffee Cake after it had come out of the oven and cooled.
And before I cut it...
